We had a water leak in our kitchen and had a claim payout for the work which includes replacement of our entire first floor flooring. If we have already received our claim payment before any work has started. If we don’t use all the funds that we receive do we return it or keep it?

Maybe, sometimes you can keep it.
Call your insurance company, and ask them how it actually works.
Not enough info, for randos on the internet, to answer your question.
What normally happens is they only give you a portion of the money up front, and then when you complete the repairs, and prove it, they give you the rest of the money.
