Had crab tonight and saved all the shells. Boiled them and now I have some condensed broth. I’ll pick out the tiny bits of meat tomorrow. Same basic concept as saving chicken bones for soup.
So, anyone have ideas or recipes to share to get a second go off of this? Off hand, I’m thinking chowder, gumbo – what options besides soup? A casserole? A cold noodle salad of some sort?

Risotto is absolutely fire with crab stock – the shells give it such a deep flavor that you can’t get any other way

Next time I suggest your roast the shells in the oven before making stock with them. Something about the roasting really brings the depth of flavor out. Bad news is, it’s a pretty smelly step, however worth it it is!
