So like a lot of people, I applied for the Platinum card close to the end of year. Approved 12/17, Amex overnighted to me on 12/18.
Upon activating the card, I immediately added $100 to my United TB, and totally forgot I haven't selected an airline yet. So about 30 minutes after the transaction, I selected United as my airline. The pending charge is "UNITED ELEC TICKET", and it posted as "United Airlines" about two days after. If I clicked on the detail of the charge, it even has a fake ticket number, and the passenger name is "MyLastName/TravelBank", the flight is from ORD to IAH which is not even close to where I live (lmao).
I didn't contact Amex and would like to see how it pans out, the flight credit of $100 was posted today (12/22), so I can tell you it will work and even work in my unique situation (make a purchase before selection).
Over the weekend, I also did Walmart+ enrollment, Uber One and picked up an ubereat order (somehow I have $35 credits instead of $20), purchased $75 LuluLemon Giftcard, bought some gifts from Saks online, enrolled Mrs. in CLEAR, made an FHR reservation for next year slightly above $300, as of Monday (12/22), everything is already credited to my account.
My family is going to eat at a fancy Resy restaurant this weekend, and I switched my Youtube Premium family plan to this card (just below $25 per month). So far, these two are the only credits I haven't got yet because they haven't happened. But man this card can pay itself easily if you work it.

Is the benefit to applying close to eoy that you get double benefit to credits? Sorry if this is a stupid question
Amex Plat is $15 Uber cash per month, except for December, where it’s an extra $20 on top of that, so $35 total.

Glad everything is working out. There have been multiple DP where people selected the airline after the purchase, usually within the same day, and getting the credit. I’m guessing activation is more or less immediate, but the evaluation on eligibility is once the charge posts, which usually 2 days later.
