I feel like a fool only just discovering this but I just pulled our broccoli I bought 2 weeks ago in pristine condition. I keep it submerged k water in the fridge. Do you do this? I now keep nearly all dinner/cooking veg in water in the fridge and wish I did this for decades! I am bowled over by how perfect they all are. In bags in water or just uncovered in water?
Only peeled carrots and celery. It does work for keeping those fresh for several extra days longer than unpeeled in the bag.
Cut peppers last longer in a jar with a piece of paper towel at the bottom and a lid that has holes (I reuse old grated cheese lids for this). Asparagus and green onions can be treated like cut flowers – set in a jar with 1-2″ of water.
Broccoli lasts longer in a sealed jar or container with a paper towel at the bottom for absorbing extra moisture – cold water in the very short term (like a few hours to a day) might help ‘freshen them up’ and keep them crisp though, similar to keeping cut and/or peeled potatoes in a bowl of cool water as you go or for short term (a couple hours max ime) to prevent oxidization/drying out.
