I love me some good almonds, and I buy them in bulk from a reputable source that offers local variety. Now I am in need of toasting them en-masse, and I can't mess around with one kilogram at the time in an oven.
Commercial roasters are in the $7,000 plus range, so those are out of the question.
Is there a smart way to evenly roast large batches of almonds (or peanurs or sunflowers) that doesn't require selling a kidney?

PS: Yes, they do sell roasted almonds in bulk, but I need to roast them my way, with my spice mix and secret recipe 😄

Are you staring a business? Why can’t you roast them in small batches more often? My understanding on the matter is that the quicker you eat them after roasting the better they are?
Maybe commercial kitchen you can rent for a few hours. Or someone you know that does some baking/cooking on the side in commercial kitchen and can lend you time on the oven.Â
The most economical way is with things you’ve already got, so your oven is the best bet. Use a convection setting if it has one, and see if you can find extra trays to fit in and roast more at a time.
What quantity of almonds are you eating per day? Can you just roast in your oven in smaller batches? Roasting decreases the shelf life of almonds, so it might make sense to keep most of them raw and then roast in batches as needed.
