I have the day off so I mixed the dry ingredients for pancakes last night. My mom gave me 3 pint size jars of oat bran. I think it’s old so I am trying to use it up pronto. So I sprinkled some of that in and some ground flax I have on hand for good healthy fats. Then I added the wet ingredients this morning. Kids are full and happy.

    For lunch I’m making black bean soup. A favorite at my house. It will use up the 3/4 cup taco meat from dinner last night. I love giving my family high quality nutrition for very minimal costs. These are beans that I over-purchased in emergency preparedness. I’ve been canning them up and using them. I have to pressure can them because my body doesn’t tolerate the lectins otherwise. It’s a whole ordeal, but one meal at a time!!!
