Is there a way to freeze the card until I decide to unfreeze it?
I'm not going to use it for awhile and want to protect it from fraud.
Having to refreeze it every 7 days seems kind of silly.

Most credit card companies do this automatic unfreeze thing unfortunately. You could try calling customer service and asking if they can disable the auto-unfreeze but Amex is pretty rigid about their security protocols. Might be worth setting a calendar reminder to refreeze every week if you’re planning to keep it locked down long term
