I have been thinking for a while about stop buying whole eggs and switch to egg whites as I throw half of my yolks anyway. Till recently it didn’t made a sense to me financially until the eggs prices skyrocketed. Just year and half ago walmart 60 count eggs used to be $5. Now it’s $14 approx. Which means each egg has roughly 30g of whites and 1800g of whites in total, costing 71 cents per 100g but walmart has a egg whites carton around $4, with 980g of whites, costing 50 cents per 100g. Now I don’t have to feel guilty of tossing yolks away. And it’s a good news for someone in cutting phase.
Purchasing egg whites is way cheaper than buying whole eggs and separating the whites

This is good to know as needed but curious as to why were you throwing the yolks away? There are so many things that can be made with egg yolks!
ETA OP I would make so much lemon curd, freeze it and jar it up and use it for Christmas gifts. Egg yolks are culinary gold and I’m wondering if you could create a egg parts swap in your friend group !
When I tried them they seemed very watery. Almost seemed like they had added water compared to any egg white i had ever separated by hand.
I buy both. I freeze the whites in ice cube trays and keep a bag of them in the freezer. I microwave scrambles a lot and so one whole egg with two frozen whites works really well. I also toss whites in oatmeal.
