I've only ever used galvanized wire scrubbers but they tend to rust fairly quickly and I have to replace them frequently.
My question is are (1) chainmail or (2) microfiber 'stainless steel cloth' effective for cleaning tough or burnt on food from stainless steel pots without doing much damage to surface? I do find that galvanized wire scrubbers are very effective but I've never used either chainmail or stainless steel cloth. There are also two options for chainmail, large chainmail and smaller chainmail with silicone which is more effective?

Green nylon scrubber with Barkeeper’s Friend is all I ever need. They rinse clean, safe on nonstick surfaces, and they don’t cause rust.
We use ones like your last link. They work really well. I like that they’re really easy to rinse out. We throw them in the wash with kitchen towels, and they come out perfect, even after going in the dryer.
Have you tried to just deglaze it with water?
I used a small plastic scraper to take most of the heavy stuff off.
