Does anyone know of publicly traded companies that are actively working in the fungi domain, especially ones where more than 50% of their revenue comes from fungi growth, cultivation, or fungi-based products (especially mushrooms)?
I have been searching but did not find anything worthy of investing with peace of mind, only very low revenue companies or ones that are fully private.
Reason: Guard against food shortages, as growing mushrooms seems like a really stable and not problematic economic endeavor.

I think your thesis is incorrect. I work with lending to one of the largest mushroom growers in North America. The industry is nowhere near stable. We are seeing a lot of consolidation since the smaller players are just not profitable.
Demand is low, input costs are rising and many grow facilities are in desperate need of modernization. On top of that, many players in the industry are already over-levered. I would not be putting any money in this industry.
