So the story is I basically have free electricity I need to use up in a month (weird terms with solar panels where my production numbers reset in the Spring). So instead of losing the excess power I've generated over the year, I'd like to get some cash for it hence the title. Are there any stable crypto currencies I could mine on standard consumer computer tech and make a few bucks back? Or is mining for profit strictly reserved for outlandish rigs/specialty equipment and farms these days? Appreciate any insights/info!

As somebody who has solar and has tried mining, it very likely isn’t worth it. Yes, if you want to mine and actually make a profit, you need specialized equipment built for mining.
Technically, you can mine some lesser known coins (remember Ravencoin anybody?) With a regular PC, but it almost always is a hobby thing and not a profit generation thing.
with a normal consumer setup you’re pretty limited these days, most major coins aren’t realistically profitable to mine without specialized hardware, even with free power, but some people still look at things like monero since it’s cpu-friendly and not totally dominated by asics, just don’t expect big returns and check current difficulty and payouts before you start. also keep in mind payouts can fluctuate a lot and some pools or wallets may have minimum withdrawal thresholds or fees that eat into small gains, what kind of hardware are you working with?
