My kids love popsicles but I like to buy the no sugar added fruit ones. They are more expensive but taste better and the sugar is at least from fruit. To supplement their "big" popsicles I freeze any bi-product juice I have in ice trays. The main two I do is pickle and watermelon because both have so much juice left over after the actual pickle and watermelon are eaten. They get to have a cool treat much more often now. I used regular ice trays for a long time but recently picked up dinosaur ice trays for cheap so they get very excited for the "little" popsicles.

    1. Pickle popsicles/ice cubes, that sounds really interesting. I almost want to go out and buy a jar of pickles. I never thought of saving juices from jars of foods, now I’m going to start looking at jars in a different way and maybe experiment with a few. Now I’m glad I kept all my silicone molds of various shapes.

      I bought a huge pack of otter-pop style ziplocks and do this too! We have experimented with everything from pudding to iced coffee and they are so delicious and make me feel less wasteful.

      I recently had to throw out some watermelon juice that was leftover from making gingerbug soda because it went sour in the fridge way quicker than expected. I should have frozen it straight away and will probably do that in the future. If you get the ratio of pickle juice and watermelon adjusted to your kids’ tastes, the electrolytes would be good for hot days. Just remember that frozen treats require more sweetness than room-temp or chilled juice. Sweet pickle juice would probably be a good to mix with it if you already make your own. Cucumbers and watermelons are cousins so-to-speak.
