Like the title says, I accidentally over reported one of my 1099-INT when submitting my tax return (was supposed to be 190, accidentally put in 1190).

    What can I expect to happen next? Pretty new to filing taxes and my notices, if I get any, would be going to my parents’ address which wouldn’t really bode well. I know under reporting is usually flagged but is over reporting by that amount still going to trigger a notice?

Even though you enter it as a 1099-INT in your tax software, the reality is it just goes on a single line of Form 1040 (or Schedule B) and the IRS isn’t likely to question it if you reported more income than they’re aware of. You should wait until the original return is processed, then file an amended return to claim a refund of any excess tax you paid as a result of the error.
