    It finally got to the point where I rely on food pantries for many of my groceries and I’m very grateful for it but I don’t really eat a lot of vegetables? So now I have a lot of cans of carrots and mixed veggies in my cabinet, other than just heating them up and slapping them in a plate is there anything more I can do with them?

      You can combined canned veggies together with beans to make soup. Add some broth or bullion if you have it. Always add a can of tomatoes if you have it.

      As others have said, make some soup. Lentil soup is good in that you just throw a bunch of vegetables in it and call it a day. Same with chili. Lentils are also relatively affordable if you are able to get a large bag of them.

      curried carrot soup (if you have onions sauteed before then add the carrots and water curry powder, if no onions just do that with the carrots you can add potatoes to it)

      cook your rice and at the add add the mixed veggies

      add the veggies to tomato sauce /puree or diced tomatoes to add to your pasta or rice

      use mixed veggies for shepard’s pie (can be lentils instead of meat)

      add to omelette

      make quiche

      make burritos

      add to beans to make chili

      You can make (pureed) carrot soup out of your canned carrots. Add some curcuma and a bit of chili. Maybe some sweet potatoes if you have them.

      Canned peas? Puree them and add butter to make mashed peas. Same concept as mashed potatoes.

      Mixed veggies: You can use those mixed veggies to make veggie burgers and veggie balls. Use dried chickpea flour meant to be turned into falafel, add water and then add your veggies. Fry as you would fry regular falafel. Either form small balls and with a salad. Or make larger patties and eat like a burger.

    6. Casseroles I find work best with canned veggies since they are pre cooked. You can throw together some pantry staples like canned soup, beans and pasta, top with cheese or bread crumbs, bake for an hour and you’ll have something for dinner.

      Seconding or third-ing shepherds pie. It’s perfect for mashed potatoes, ground meat, and canned/frozen veg

    8. Butter + sugar/syrup + canned carrots = candied carrots

      Rice + can of soup + mix veg = casserole
