Hey all – have been starting to use an old school pressure cooker and absolutely love it. Suprised actually that they're not more popular. Chillis, etc are now done in a fraction of the time. Wondering what people think of them and if you can share any other things that they do well? The big thing is the amount of liquid, which I've sort of mastered now, but – yeah, any ideas / recipes that are good for cooking in bulk would be appreciated 🙂

I Love ribs in it. Done in 20mins (plus maybe 10 in oven or air fryer to finish with sauce)
Also roasts and short ribs. Does a great job at those tough cuts you’d usually braise for a long time, but quicker.
Chicken broth. 45 minutes in the pressure cooker results in better tasting broth than 8+ hours in a stock pot. I get the two pack raw chickens from Costco and use the carcasses for broth.
My impression is that pressure cookers are incredibly popular, just in the smaller electric version (instant pot).
I have both types, and use the big one for canning. But one of my favorite things to do in the instant pot is multilevel cooking. Make a stew or curry in the pot, but also set a metal trivet right in there, legs of it in the curry. On the trivet, set a metal bowl and cook my rice in there at the same time. Depending on how long the main dish has to cook, use white or brown rice so the timing matches.
