
I got most of the ingredients at Costco, so it's hard to get the exact cost per serving, but I tossed shredded cabbage and apples in a citrus vinaigrette (1 orange,1 lemon, a bit of apple cider vinegar, and an equal amount of oil), then topped it with shredded rotisserie chicken ($9), dried cranberries ($20 for a huge bag), pecans ($24 for a huge bag), and a bit of feta. The chicken and salad will provide enough for 8 portions (4 days for the two of us), and the rest of the toppings will last for ages in the fridge, pantry, or freezer.
I love taking inspiration from restaurant menus. I couldn't bring myself to spend $20 on a chicken/cranberry/ apple/pecan salad when I could (and did) make or for about $4 per serving. It's the best way to make you think that each meal is a treat.

This is pretty on track. I’ve made menu items for pricing. Its common for 1/4 each to be food cost, labor, overhead/rent, profit. So maybe at 20 they were a wee bit overpriced.
