Any major expense tracking players that I should for sure explore that you find helpful already or have considered trying?
I figured this could be helpful research to do, compile, and share, even if not that scientific. I'm a bit OCD, and I do like to shop around before making a decision about something before I commit to it.
I'd like to develop my own also if there are gaps in what is out there and what is affordable.
Caveat: I would exclude enterprise finance apps, this is just for the personal expense tracker category.

I would not consider budgeting apps like YNAB to be an expense tracker app. While it does expense tracking, it’s because of the necessity to track against the budget, but the budget is the primary functionality.
Wow, you have a huge project in front of you! I would add:
* Actual Budget
* GnuCash
* Empower
* Lunch Money
* Origin Financial
* Pocketsmith
* Quicken
* Quicken Simplifi
* Tiller
