So I'm thinking about buying a chest freezer specifically for buying half a cow as the meat is extremely well priced per pound (plus you get all the bones for stock).
But I'm thinking is there anything else I could/should be stocking up with in bulk and where should I be looking to buy these things? I eat just about anything and am confident in a kitchen and can butcher just about anything if needed.

Your best bet is going to be leaving room for sale meats. Next time you see 70% off of a leg of lamb you can snatch it up
Watch the weekly sales flyers and stock up on whatever is a great deal. I buy chicken thighs at 99 cents a pound, hams around holidays, etc.
Balance your diet – how about adding some whole chickens, maybe half a pig, a lamb, some bacon.
Then if you have space, add those annoying things to run out of – milk, bread.
I usually have some pre-made pizza bases, some bags of grated cheese, a bag of oven potato chips/fries, frozen fish. They are good for an “instant meal” when I’m tired, or forgot to defrost something.
My local butcher does half a hog for $299.
The local IGA did a 40lbs of chicken for $80 last fall. Picked that up.
When Kroger does big frozen items on sale – like chicken tenders, nuggets, etc – in the freezer they go.
Additionally to beef and chicken, I use the big freezer in the basement for various flours. It takes at least three full days to kill the unavoidable critters and their eggs. Mail order of rye, spelt, buck wheat, barley, etc is my only way to get some.
