We’re about to put our longtime family home on the market. I reached out to two real estate agents I’ve known casually in the community for several years. One of them presented lots of helpful information and marketing material. The other presented a market analysis and said to contact her if we’d like to pursue. I mentioned to the first, the one we’d likely choose, that I was doing my due diligence and talking to another agent as well, and would then get back to her. Now I get the feeling she was insulted. Isn’t it standard practice for sellers to interview more than one potential agent?

I mean, tell them that. “Hey, sorry if you think it wasn’t standard practice but it’s my standard. If that offends you, that’s OK, we’re going with you anyways” or…find another agent who is a bit more humble.
It is. Everything in real estate is negotiable. Nobody is entitled to your money.
It’s always recommended and I fully understand why and agree in theory, but in reality no one I personally know (well enough to know this) does this. I’d say half the people I know go with a relative or friend, and the other half go with a well known popular realtor.
That said, I don’t think it’s so rare or inherently insulting that the realtor reacted like they did to you.

Why?
You absolutely should interview a couple of agents to see who you are most comfortable with. Frankly someone acting assumptive/entitled should be viewed with hesitation, but to be fair, some productive agents have a bit of of that air about them.
You should be upfront, and were. Go with who you feel is the best fit for your needs. I’m a Reator, btw, and 100% expect potential clients to interview other agents.

Yes, it’s best practice. Any agent who has a problem with that is not very professional.
Would you get into a serious relationship someone who decided you were getting married based on getting coffee once? No.
Maybe start the search by telling them first “hey I am interviewing a few agents , would you be interested? “ because it looks like you told them after they had been doing some work already. It’s not a lot and definitely worth earning your business but some people may not want to work for free.
You should interview as many as you can, but be upfront about what you are doing some may not want to participate in that
You left out what the commission pct is they are looking for ? Makes all the difference
