I have been making a slow cooker "chili" that I really like and is really cheap + healthy for me. I have switched to buying almost exclusively canned vegetables to reduce my costs and find I get the same taste/quality. Each meal costs me about $10 to make and I can stretch it out across 4 or 5 days when I pour it over rice.

Here is the ingredients list. Items can be added/removed to your tastes:

    • 1 lb of ground chicken or turkey (my local grocery stores in Canada sell 4 lb value packs for $10)
    • 1 can of diced tomatoes (preferably chili-style since they include herbs/spices)
    • 1 can of corn kernels
    • 1 can of mushrooms
    • 1 can of olives
    • 1 can of beets
    • 1 diced onion
    • 1 cup of pre-cooked chick peas
    • Lots of spices in amounts as you desire. I use garlic powder, pepper, beef broth cubes, crushed red pepper, paprika, poultry seasoning and chili powder

I season and cook the ground meat first, then put everything into the slow cooker for 8 hours. Don't drain any of the liquid from the cans, just dump everything in and cook.
