If I bought something from another state, would that show up on my credit card history? Just the state I bought it in. Like, let's say Texas?

Generally, yes, merchant location is included as part of the transaction.
It depends on the specific merchant as to whether the posted business location is correlated with their actual address (e.g., some chains may list the headquarters or something).
In any case, assume yes.
Every issuer records basic merchant info like the address, so yes. Not all of them show that metadata to the customer tho
by “history” do you mean your statement? There’s a lot of info on your statement and yes the state is often there. It’s often the state of the headquarters of the place you got something from so transactions look out of state all the time.
If in a gas station. They might ask for the zip code linked to the card
The bank might use the gps location of the phone as well.
