As the title states I need some ideas for snacks, food to prep for on the road. My work is making me travel in 3 days a week. I'll be staying in hotels mostly so I am bringing a cooler with me. I'd like to meal prep on monday and then have lunch and dinner planned for Tuesday, Wednesday and Thursday. I'll need stuff that can stay cold or be heated up in a microwave. Any help or suggestions would be such a great help!

Bulk buy those little peanut butter cracker things. They keep me out of fast food places when I get hungry.
For your scenario, I’d avoid rice, hate having it cold and don’t trust that it won’t have that bacteria it gets if not properly stored and handled.
Quinoa salad
Chicken salad
Some sort of soup or stew?
Chili
I take a lot of wraps with me to work because I don’t want to have to stand in a line for the microwave. I just use a tortilla, mustard, lunch meat or canned chicken, lettuce, tomatoes, cheese, and I add banana peppers. You can get several of them from one package of tortillas and lunch meat.
Also packs of rice that can be microwaved and a can of tuna with some soy sauce and some garlic.
Why aren’t you getting a meal stipend if you are on the road overnight?
ETA: Also, try to book hotels with kitchen, most brands have at least one extended stay option. I travel for work 4-5 days a week but still cook a majority of my own meals.
I’d think of shelf stable things, like filling your trunk with a box of canned goods, crackers, etc…
Because you’ll likely yo yo between just wanting the least amount of work and hating the idea of anything you prepped and went through the hassle of packing and keeping cool.
