TLDR; I am an unemployed law student in Chicago, so I have to be very careful with my finances. I’m coming from Ohio, so everything, as expected, is more expensive here. The snacks I buy (chips, pretzels, granola bars, etc.) can really run up a tab and don’t last too long.
I can’t eat anything with gelatin (no Rice Krispies and/or gummies), and ideally I want to get protein in whenever I can. What are some cheap, relatively easy snacks I can make at home to pack for school? Any input is welcome!

Season chickpeas and roast them in the oven. Pretty good 🙂
You won’t get much cheaper then popcorn. I know it doesn’t have protein but it’s a whole grain and cheap AF.

I’ve been making a lot of dense bean salads lately. 3 can of various beans, chopped red onions, some kind of vinaigrette and feta cheese. It lasts in the fridge for some time and it is so dense normally 3-4 spoonfuls is enough.
Dehydrate fruit? Apple chips, strawberries, bananas?

Get yourself a dehydrator from a thrift store. You can frequently find them brand new under $20, or spring for a new one.
Use it to make fruit and veggie snacks. Very cheap and you can season them any way you like. I’m currently snacking on squash with taco seasoning
