Hi, I am a tax preparer/EA that works for a midsized firm. Regarding the list requirement (e.g. Name, EIN, entity type etc) of tax returns prepared, I imagine my employer would be.. less than happy if I have that info to myself.. how do you navigate that at your firm?

The firm is responsible for keeping that info, not you personally. You would keep it if you were a solo preparer.
Yes, if you take proprietary information home with you your employer will be less than happy and a smart employer will sue you for stealing the firm’s client information and violating laws against unauthorized disclosure of client information.
You’re an EA? Did you have any training on rules of professional responsibility?
